Decades before the flame from his whiskey still was extinguished by prohibition, J.B. Kirk was a prominent distiller in Woodbury, Tennessee. The Kirk’s settled in Tennessee when local natural resources were a vital part of the distilling process. J.B. Kirk grew his own grain for his mash bill, used the limestone filtered water from his spring that never ran dry, and utilized the diverse Tennessee weather for his aging whiskey. It sounds simple enough, but from growing crops to aging barrels, depending on Tennessee weather is risky business. But more times than not, the volatile Tennessee climate turned out to be a hidden ally, breathing life and complexity into the barrels of aging whiskey, shaping the soul of his spirit.

The stories surrounding the history of J.B. Kirk sound like tales from the Wild West: vandals at Kirk’s Distillery, murder in Kirk’s Saloon, secret deals with the Attorney General, and pardons from the Governor himself. But pardons could not save his distillery from prohibition. After sitting dormant for more than a century, the great-great-grandsons of J.B. Kirk revived their family’s bourbon whiskey brand, and today the J.B. Kirk brand is still 100% family owned and every ingredient was grown and distilled in Tennessee, where it is exclusively sold. This December (2025) J.B. Kirk has been chosen as the bourbon used in holiday drinks crafted by another brand that has deep roots in Tennessee. M Street Entertainment was an instrumental part in developing The Gulch, and Nashville dining as a whole.
In the early 2000s Founder, President, and CEO Chris Hyndman took a gamble in a city that only had a handful of successful independent restaurants. Twenty five years later he weathered the storm of a recession and pandemic, and continues to run some of the most well known restaurants, located in one of the most sought after areas, in a city that was voted “America’s Favorite City in 2025” by YouGov.
